Does anybody know what catfish species this refers to?

Probably Silurus glanis, since this species is known around the region where the shipwreck was found.

Could also possibly be Clarias, as remains of Clarias have been in found in archaeological excavations in Anatolia. They were most likely to have originated from the River Nile in Egypt, and found their way to Turkey through supply routes for trade goods.
It is still more likely though that they are Silurus though, as, erm, Silurus says. I think Clarias were more likely to be preserved smoked fairly intact (minus the viscera) rather than cut into steaks as has been suggested by the researchers in this case.

Elsewhere on the Nat. Geog. site I found out that they think the fish was caught on the Crimean Peninsula; also, it was 8 feet long. So it does sound like Silurus glanis.
