Elephantnoses and cats?

Would a Peter's Elephantnose bother/stress out/electrically stress cories or plecos, if kept in the same tank?

It's very unlikely that it would do it on purpose. However, it may be that the Cories don't feel at ease, because the Elephant is a playful fish and, when kept by itself, will find other ways to enjoy itself. The Cories may thus become its (unwanted) playmates.
But it's also possible that they go on nicely together.
So the advice would be: just try and watch carefully what happens. Or take some South-American knifefish, like Apteronotus. They go perfectly with Cories.

yup.
sticking biotope is the way to go with uncertain behaviour in fishes like these.

An Elephantnose would be an excellent tankmate for Synodontis and Anaspidoglanis.
