Now for the fish, I have 2 bullhead and 1 sunfish in the 65 gallon, the 29 gallon is empty, i am planning on breeding shrimp and bristle nose plecs in it

Nice start. The 29 Gal tank is indeed enough for 2 pairs of A. Cirrhosus. Try to provide them with lots of hiding places such as driftwoods, rocks, ceramic caves, and some plants. These furniture will lessen aggression towards each other and minimize stress. Moreover, if possible, you may want to switch to sand instead of gravel because it eliminates the trauma caused by the gravel's sharp and irregular edges. Good luck and enjoy! :-BD

I'm planning on putting some java moss or Christmas moss and driftwood in the 29 gallon. The gravel is what I had but ill hopefully throw some sand in there. Do you think I could put a pair of cherry shrimp in there as well?

I don't know much about live shrimp because I never mixed them with my carnivorous plecs. I'm afraid the plecs might eat them considering fresh prawns is part of their diet.
A. Cirrhosus are mainly vegetable eaters so I think there won't much problem putting live shrimps in there.

Freshwater shrimp appear to be fine with most plecos. I have cherry shrimp currently with Ancistrus, small Pseuda (L600), Peckoltia, Baryancistrus and Scobiancistrus in my growout tanks without problems. But I wouldn't do at pair. If you get a half dozen in there then the colony will establish itself quickly. With a pair, it doesn't take much to lose one and then it's over for your population. I use them for scavenging in my growout tanks and they work great. I breed them by the hundreds in 2 tanks. With the moss there they'll propagate quickly.

I have a tank with a trio of L. triactis and I threw in over 50 cherry shrimp. For the first week or so, I saw the shrimp everywhere; now, I hardly see any. I am sure the plecos are eating the shrimp.

Hmmm...wonder if it's a size thing. I had 5 L. joselimai with probably 200 cherry shrimp and the popular still grew. But the L. joselimai were very small, like 4 - 5 cm and I had a lot of Subwasstertang in the tank, and since it was a quarantine/growout, I fed the baby fish 2x a day. I've never had L. triactus with them either so it could be a species to species thing too.

Size could potentially be a factor but the Triactis and Joselimai are both Leporas, so they typically have the same behavior and will consume any meat easily available to them. To be safe, better not mix live shrimps with them or any voracious carnivore plecs.
