Where do I find, or look for, a good break down in gross morphologic differences between genera of plec? Also, does anyone know of an entry level general taxonomic guide for catfish? maybe I need a catfish text book?

Jon Armbruster has a loricariid page with a key to many (but not all) of the genera.
As for the kind of book you want, the nearest thing would be the Burgess catfish atlas (although it is somewhat out of date taxonomically speaking by now).
